For a vegetarian option, substitute the ground pork with firm tofu, pressed and cubed. Use vegetable broth instead of water and a vegetarian bouillon cube.
To enhance the flavor, add a small piece of ginger (about 1 inch), minced, along with the pork while browning.
Adjust the amount of nori according to your taste preference. Some may prefer a stronger seaweed flavor.
