Melt butter in a large stockpot or Dutch oven over medium-low heat; add diced tomatoes, bell peppers, crushed garlic, and sliced green onions. Cook, stirring frequently, until the tomatoes have softened and released their juices, about 30 to 60 minutes.

Stir in the rinsed kidney beans, baby corn, and chopped celery into the tomato mixture. Add chili powder and lime juice, then season with sea salt and freshly ground black pepper. Cover and cook on low heat, stirring occasionally, until the celery is tender but still retains a slight bite, about 1 hour.

Stir in the flaked crab meat and canned tomatoes (breaking them up roughly with a wooden spoon) into the kidney bean mixture. Season with salt and pepper; add a pinch of brown sugar if the chili tastes too acidic. Simmer for another 15 minutes to allow the flavors to meld.

Gently stir in the shrimp, scallops, and hearts of palm into the chili. Cook until the shrimp are bright pink on the outside and the scallops are opaque and cooked through, about 2 to 3 minutes. Be careful not to overcook the seafood.
For a spicier chili, add a pinch of cayenne pepper or a finely chopped jalapeño pepper along with the bell peppers.
If you prefer a thicker chili, you can mash some of the kidney beans against the side of the pot to release their starch.
Serve hot, garnished with fresh cilantro, a dollop of sour cream or Greek yogurt, and lime wedges.
