Combine all ingredients (brown sugar, cilantro, tarragon, salt, basil, onion powder, garlic powder, dried lemon zest, parsley, black pepper, and paprika) in a food processor. (Prep time: 5 minutes)

For a marinade, whisk 2-3 tablespoons of the rub with 1/4 cup of olive oil per pound of chicken. Marinate in the refrigerator for at least 1 hour, or up to 4 hours for maximum flavor.
Remove the marinated chicken from the refrigerator 30 minutes before cooking to allow it to come to room temperature for more even cooking.
This rub is also excellent on other poultry, pork, or even grilled vegetables.
