Follow The Directions

01

Step

In a bowl, whisk together the soy sauce, smashed garlic, chopped ginger, monosodium glutamate, salt, black pepper, and sesame oil until the salt is dissolved. Pour this marinade into a large resealable plastic bag. (5 minutes)

02

Step

Add the chicken thighs to the bag, ensuring they are well-coated with the marinade. Squeeze out any excess air, seal the bag tightly, and marinate in the refrigerator for at least 1 hour, or up to 4 hours for a deeper flavor. (1 hour+)

03

Step

Remove the chicken thighs from the marinade, shaking off any excess. Pour the marinade into the bowl of a programmable electric rice cooker. (2 minutes)

04

Step

In a small bowl, whisk together 2 tablespoons of water and the cornstarch until smooth. Whisk this mixture into the marinade in the rice cooker. (3 minutes)

05

Step

Add the chicken thighs to the rice cooker, arranging them in a single layer. Add just enough water to barely cover the chicken. Stir gently to combine. (2 minutes)

06

Step

Seal the rice cooker and select the regular rice setting according to the manufacturer's instructions. Cook until steam starts to escape from the top of the cooker (approximately 20 minutes). Then, set the cooker's timer for an additional 10 minutes of cooking. (30 minutes)

07

Step

Unlock the cooker and carefully stir the chicken. Set the cooker's timer for another 10 minutes of cooking. (10 minutes)

08

Step

Once the cooking cycle is complete, switch the rice cooker to the 'keep warm' setting and allow the chicken to rest in the cooker for 20 minutes before serving. This resting period helps the chicken retain its moisture and become even more tender. (20 minutes)

For an extra layer of flavor, consider adding a tablespoon of Shaoxing rice wine or dry sherry to the marinade.
If you don't have monosodium glutamate on hand, you can omit it or substitute it with a teaspoon of mushroom powder for a similar umami boost.
Serve this delicious rice cooker chicken with a side of fluffy white rice and steamed vegetables for a complete and satisfying meal.
Chicken thighs can be substituted with chicken legs, drumsticks or breast.
