Pour in the red wine and balsamic vinegar. Bring the mixture to a gentle boil, then reduce the heat to medium-low. Simmer, uncovered, until the liquid has evaporated and the marmalade has thickened to a jam-like consistency. Stir occasionally to prevent sticking. (15-20 minutes)

Season with sea salt to taste. Remember that the flavors will intensify as the marmalade cools. Allow to cool completely before serving or storing.

For a deeper, more complex flavor, consider adding a sprig of fresh thyme or a bay leaf to the marmalade during the simmering process. Remove before serving.
Store the Red Onion Marmalade in an airtight container in the refrigerator for up to 2 weeks.
If the marmalade becomes too thick during cooking, add a tablespoon or two of water to loosen it up.
Serve at room temperature to allow the flavors to fully develop.
