For a richer flavor, use smoked paprika instead of annatto powder. Add a bay leaf during simmering for extra depth of flavor; remove before serving. If you prefer a smoother consistency, mash a portion of the beans with a fork before serving. These beans are excellent served with white rice, avocado slices, and a dollop of sour cream or Greek yogurt.
