Follow The Directions

01

Step

Preheat your oven to 375 degrees F (190 degrees C). Lightly grease an 8x8-inch baking dish with cooking spray or olive oil. (5 minutes)

02

Step

In a medium bowl, combine the ricotta cheese, thawed spinach, 1 1/2 cups of the grated Romano cheese, eggs, salt, and pepper. Mix until well combined. (5 minutes)

03

Step

To assemble the lasagna, spread 1/4 cup of spaghetti sauce evenly across the bottom of the prepared baking dish. Arrange a single layer of frozen ravioli over the sauce. Spread about 1 cup of the ricotta mixture over the ravioli. Repeat these layers three more times, ending with a final layer of frozen ravioli. (15 minutes)

04

Step

Spread the remaining 1/2 cup of spaghetti sauce over the top layer of ravioli, then sprinkle with the remaining 1/2 cup of Romano cheese. Cover the dish tightly with aluminum foil. (5 minutes)

05

Step

Bake in the preheated oven for 40 minutes, or until the casserole is bubbling hot. Carefully remove the aluminum foil and bake for an additional 10 minutes, or until the cheese is melted and lightly browned. (50 minutes)

06

Step

Remove from the oven and let stand for 10 minutes before slicing and serving. This allows the lasagna to set slightly, making it easier to cut and serve. (10 minutes)

For an extra layer of flavor, consider adding a thin layer of pesto between the ricotta mixture and ravioli.
Freshly grated Romano cheese will provide a more robust flavor than pre-grated.
Ensure the spinach is thoroughly drained to prevent a watery lasagna.
Feel free to substitute other types of cheese ravioli, such as mushroom or meat-filled, to customize the flavor profile.

I found that 40 minutes with foil and 10 minutes without was too long and the top got burnt. Next time I'll check it sooner.

Next time I might try using different flavored ravioli, like mushroom or sausage, to change it up.

I used a jar of pesto instead of spaghetti sauce on one of the layers, and it gave it a great flavor twist.
