For a richer flavor, consider using half-and-half or heavy cream in place of some of the evaporated milk. Fresh oysters can be used instead of canned, if preferred. Just be sure to shuck them carefully and check for any shell fragments. Do not allow the stew to boil vigorously, as this can cause the milk to curdle. Adjust the amount of salt and pepper to your liking. A pinch of cayenne pepper can add a pleasant kick.
