For a richer flavor, use bone-in, skin-on chicken pieces.
If you don't have dry sherry, you can substitute dry white wine or chicken broth.

A squeeze of lemon juice at the end brightens the flavors.
For a thicker sauce, remove the chicken and onions and simmer the sauce uncovered for a few minutes until it reaches your desired consistency.
