Follow The Directions

01

Step
2 mins

In a medium bowl, whisk together 1 cup of beef broth and the chili seasoning mix until well combined. (Prep time: 2 minutes)

02

Step
1 mins

In a medium-sized pot or Dutch oven, melt the coconut oil over medium-high heat. Add the rinsed quinoa and cook, stirring constantly, until fragrant and lightly toasted, about 1 minute.

03

Step
0 mins

Pour the broth-seasoning mixture, the remaining 1 cup of beef broth, and the diced tomatoes into the pot with the quinoa. Bring the mixture to a boil, stirring frequently.

04

Step
25 mins

Reduce the heat to low, cover the pot, and simmer until the quinoa has absorbed most of the liquid and is tender, about 20 to 30 minutes.

05

Step
8 mins

Stir in the tri-bean blend, diced green chilies, and frozen corn. Simmer until the beans and corn are heated through, about 5 to 10 minutes.

For a vegetarian version, substitute vegetable broth for beef broth.
Add a squeeze of lime juice at the end for a bright, fresh flavor.
Top with shredded cheese, chopped red onion, sour cream or Greek yogurt, diced avocado, cilantro, or a dollop of your favorite hot sauce.
Feel free to adjust the amount of chili seasoning to your preferred level of spiciness.
This chili tastes even better the next day, as the flavors have time to meld together.
