For optimal flavor, apply the rub at least 2 hours before cooking, or even better, the night before. This allows the spices to penetrate the meat. Adjust the amount of cayenne pepper to your preference. For a milder rub, reduce it to 1/2 tablespoon. For extra heat, add up to 2 tablespoons. This rub is also fantastic on ribs, chicken, and even grilled vegetables. Get creative and experiment! When storing the rub, be sure the container is truly airtight to prevent the brown sugar from clumping.
