Step

Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper. (5 minutes)

In a small bowl, combine the softened cheese spread, chopped fresh parsley, lemon zest, salt, and pepper. Mix well and set aside. (5 minutes)

Thaw the puff pastry sheet in the refrigerator for 3 to 4 hours, or at room temperature for 30 to 40 minutes, until pliable but still cold. (40 minutes)

On a lightly floured surface, gently roll out the puff pastry sheet. Cut along the pre-scored lines to create 6 equal squares.

Using a sharp knife, score a border about 1/2 inch from the edge of each square, being careful not to cut all the way through the pastry. Prick the center of each square generously with a fork. This will prevent the center from overly puffing up. (10 minutes)

Place the prepared squares on the lined baking sheet and bake for 12 minutes, or until lightly golden.

Remove from the oven. If the centers have puffed up, gently press them down with the back of a spoon. Evenly spread the Boursin mixture over the centers of each square, then top with the chopped grape tomatoes. (5 minutes)

Return the baking sheet to the oven and bake for an additional 12 to 14 minutes, or until the edges are golden brown and the tomatoes are softened and lightly roasted. (14 minutes)

Remove from the oven and let cool slightly before serving warm. These are also delicious at room temperature.

For an extra layer of flavor, consider adding a sprinkle of grated Parmesan cheese before the final bake.
If you don't have fresh parsley, dried parsley can be substituted. Use about 1 tablespoon of dried parsley.
Feel free to experiment with different types of cheese and toppings. Goat cheese and roasted red peppers would be a delicious alternative.
