Desalt the Cod (10-25 minutes): In a large saucepan, bring water to a boil. Add the salted cod and boil until the saltiness is reduced to your liking. This may take anywhere from 10 to 25 minutes, depending on the salt content of the cod. Drain the cod thoroughly and let it cool completely.

Prepare the Salad (5 minutes): In a large bowl, gently combine the diced avocado, tomato, and Spanish onion.

Combine and Dress (5 minutes): Once the cod is cool enough to handle, flake it into small pieces, discarding any bones. Add the flaked cod to the avocado mixture and stir gently to combine. Drizzle with extra-virgin olive oil and a single drop of white vinegar. Season with a pinch of ground black pepper. Stir gently.

Chill and Serve (45 minutes): Cover the bowl with plastic wrap and refrigerate the salad for at least 45 minutes to allow the flavors to meld together. Serve chilled and enjoy!

For a more intense flavor, try using sherry vinegar instead of white vinegar.
Feel free to add other vegetables to the salad, such as bell peppers or cucumbers.
If you're short on time, you can soak the cod in cold water for several hours, changing the water frequently, to reduce the salt content.
