For a richer flavor, consider using brown sugar instead of granulated sugar.
Toasting the oats lightly before adding them to the dry ingredients can enhance their nutty flavor.
If you don't have maple syrup extract, a tablespoon of maple syrup can be used, but reduce the yogurt by a tablespoon to maintain the correct batter consistency.
The loaf can be stored in an airtight container at room temperature for up to 3 days.
