Follow The Directions

01

Step
15 mins

In a large saucepan, combine the undrained white beans and chicken stock. Bring to a boil, then reduce heat to low and simmer gently until the beans are tender but hold their shape, about 15 minutes. Drain, reserving 2 cups of the flavorful cooking stock.

02

Step
15 mins

While the beans simmer, heat olive oil in a large skillet over low heat. Add chopped onions, diced carrots, and celery. Cook, stirring occasionally, until the vegetables are softened and fragrant, 10 to 15 minutes.

03

Step
1 mins

Stir in the minced parsley, rosemary, thyme, and garlic. Cook for 1 minute more, until the herbs release their aromas.

04

Step
15 mins

Add the cooked and drained white beans to the skillet along with 2 cups of the reserved cooking stock. If you don't have enough reserved stock, supplement with additional chicken stock or water to reach 2 cups total.

05

Step

Simmer the mixture until the stock reduces slightly and creates a light, flavorful sauce, about 15 minutes. Stir occasionally to prevent sticking. Add more stock if the mixture becomes too dry.

06

Step

To serve, sprinkle generously with freshly grated Parmesan cheese and garnish with a scattering of chopped fresh parsley.

For an even richer flavor, consider using homemade chicken stock.
A splash of dry white wine added along with the stock can also elevate the dish.
If you prefer a creamier texture, mash a small portion of the beans before simmering in the skillet.
