Follow The Directions

01

Step
20 mins

Prepare the Potato: Place the potato in a large saucepan and cover with cold water. Bring to a boil over high heat. Reduce heat to medium-low and simmer gently until the potato is fork-tender, about 15 minutes. Drain the potato well and let it cool until you can handle it comfortably, around 5 minutes.

02

Step
5 mins

Create the Fudge Base: Peel the cooled potato and mash it thoroughly in a mixing bowl until smooth. Stir in the vanilla extract. Gradually add the sifted confectioners' sugar, mixing until the mixture is smooth, firm, and resembles a thick dough. Gently fold in the sweetened flaked coconut until evenly distributed.

03

Step
1 hrs

Chill and Serve: Lightly grease a 9-inch square cake pan with cooking spray. Spread the potato mixture evenly in the prepared pan. Cover with plastic wrap, pressing it gently onto the surface to prevent a skin from forming. Refrigerate for at least 1 hour, or until the fudge is firm and set. Once chilled, cut the fudge into bite-sized squares and serve.

For the best texture, ensure the potato is cooked until very tender and mashed until completely smooth.
Sifting the confectioners' sugar will help prevent lumps in the fudge.
If you prefer a less sweet fudge, you can reduce the amount of confectioners' sugar slightly, adjusting to your taste.
Store the potato fudge in an airtight container in the refrigerator for up to 3 days.
