Add the chopped tomatoes (with their juices), sliced olives, capers, jalapeno strips, bay leaves, thyme, and oregano to the skillet. Bring the mixture to a boil, then reduce the heat and cook, stirring occasionally, for about 5 minutes, allowing the flavors to meld.

Nestle the browned pork chops into the vegetable mixture in the skillet. Cover the skillet, reduce the heat to low, and simmer until the pork chops are cooked through and no longer pink in the center, about 12 minutes.

Remove the pork chops from the skillet and place them on a serving plate. Increase the heat under the skillet to medium-high. Discard the bay leaves and herb sprigs from the sauce. Cook the sauce until it is reduced and slightly thickened, about 3 minutes.

Spoon the vegetables and sauce generously over the pork chops. Garnish with chopped fresh cilantro. Squeeze fresh lime juice over the chops and sauce. Serve immediately while warm.

For an extra layer of flavor, consider marinating the pork chops for 30 minutes in a mixture of olive oil, lime juice, and a pinch of cumin before cooking.
If you prefer a milder flavor, remove the seeds and membranes from the jalapeno pepper before slicing.
