Follow The Directions

01

Step

Preheat the oven to 400 degrees F (200 degrees C). (5 minutes)

02

Step

Place tomatoes, celery, carrot, onion, 2 guajillo peppers, and garlic in a large pot; cover with water and bring to a boil. Reduce heat to medium; simmer until vegetables are tender. (20 minutes)

03

Step

Drain the vegetables and transfer them to a blender or food processor.

04

Step

Add chicken stock, remaining 2 guajillo peppers, and chicken bouillon to the blender; blend until smooth. (2 minutes)

05

Step

Place chicken in a baking dish; pour guajillo sauce over and around chicken until completely covered. Top with bay leaves. (3 minutes)

06

Step

Bake in the preheated oven until chicken is no longer pink at the bones and the juices run clear, stirring sauce every 20 minutes. An instant-read thermometer inserted near, but not touching bones, should read 165 degrees F (74 degrees C). (60 minutes)

For a richer flavor, toast the guajillo peppers lightly in a dry skillet before simmering.
Adjust the amount of chicken bouillon to your taste preference.
Serve with a garnish of fresh cilantro and a squeeze of lime for added brightness.
Consider marinating the chicken in the adobo sauce for at least 30 minutes, or up to overnight, for a more intense flavor.

I was a bit intimidated by the use of dried chiles, but it was actually quite easy to make. The result was well worth the effort!

I found that 60 minutes was a bit too long for my oven. I would recommend checking the chicken after 45 minutes to avoid overcooking.

This recipe is fantastic! The adobo sauce is so flavorful and the chicken comes out incredibly tender. My family loved it!

This has become a staple in our house! We make it at least once a month.

I added a pinch of cumin and a dash of cinnamon to the adobo sauce for a little extra warmth. It was delicious!
