Follow The Directions

01

Step

Prepare the Feta: Gently rinse the feta cheese under cold water to remove excess brine. Pat thoroughly dry with paper towels. Cut the feta into uniform, half-inch cubes. (5 minutes)

02

Step

Layer the Ingredients: In a clean, 1-pint glass jar (or any suitable airtight container), begin layering the feta cubes. Alternate layers of feta with sprigs of fresh thyme, ensuring the thyme is evenly distributed throughout. Continue layering until the jar is nearly full, leaving a small amount of headspace at the top. (10 minutes)

03

Step

Prepare the Marinade: In a small bowl, whisk together the white wine vinegar and honey until the honey is completely dissolved and the mixture is smooth and homogenous. (2 minutes)

04

Step

Infuse the Cheese: Carefully pour the vinegar-honey mixture over the cheese, ensuring that all the feta cubes are submerged. If necessary, gently press down on the cheese to release any trapped air bubbles. The liquid should reach just below the neck of the jar. (3 minutes)

05

Step

Marinate: Screw the lid on tightly, ensuring an airtight seal. Place the jar in the refrigerator and allow the cheese to marinate for at least 24 hours, or preferably 2-3 days, to allow the flavors to fully develop. The longer it marinates, the more flavorful it will become. (24+ hours)

06

Step

Serve: Before serving, allow the cheese to come to room temperature for about 15-20 minutes. Garnish with additional fresh thyme sprigs, if desired. Serve with crusty bread, crackers, or as part of an antipasto platter.

For a spicier kick, add a pinch of red pepper flakes to the marinade.
Experiment with other herbs such as rosemary, oregano, or dill.
Use a high-quality white wine vinegar for the best flavor.
The pickled cheese will keep in the refrigerator for up to 2 weeks.
