In a bowl, combine 2 tablespoons of sugar with warm water, stirring until dissolved. Add yeast and let it sit until foamy, about 5-10 minutes.

In a large bowl, whisk together the remaining 1 tablespoon of sugar, flour, and salt. In a separate bowl, combine sourdough starter and egg yolk. Lightly whisk egg white in a small bowl and reserve in the refrigerator.

Pour the yeast mixture and sourdough mixture over the flour mixture. Mix with a wooden spoon until a dough starts to form. Turn out onto a lightly floured work surface and knead until a smooth ball forms.

Spray the inside of a bowl with cooking spray. Return the dough to the bowl, cover with a clean cloth, and let it rise for about 1 hour.

Punch down the dough and divide it into 12 equal portions. Roll each portion into a small ball, then shape it into a 3- to 4-inch-long stick. Divide the breadsticks between 2 greased or nonstick baking sheets. Cover with cloths and let them rest for approximately 45 minutes.

Preheat your oven to 350 degrees F (175 degrees C).

Bake in the preheated oven until the breadsticks are lightly golden brown, about 15-20 minutes. Remove one pan at a time and brush the tops with the beaten egg white. Continue baking until medium brown, an additional 5-10 minutes.

For a richer flavor, try using bread flour instead of all-purpose flour.
Experiment with different toppings like sesame seeds, poppy seeds, or grated Parmesan cheese before baking.
Store cooled breadsticks in an airtight container at room temperature for up to 3 days or freeze for longer storage.
