For an extra crispy chicken, double fry it! Fry once at a slightly lower temperature (325°F) for 5 minutes, then again at 375°F until golden brown. If you don't have sherry, dry white wine can be used as a substitute. The sauce can be made ahead of time and stored in the refrigerator. Simply reheat before serving. Serve with steamed rice and a side of broccoli for a complete meal.
