Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with cooking spray. (Prep time: 5 minutes)

02

Step

In a mixing bowl, beat together white sugar, butter, 1 teaspoon vanilla extract, and a pinch of salt until smooth. Add flour and stir until a dough forms. Press the dough evenly into the bottom of the prepared baking dish. (Prep time: 10 minutes)

03

Step

Bake in the preheated oven until the edges are lightly golden brown, approximately 15 to 17 minutes. Remove from oven and let the crust cool completely. (Bake time: 15-17 minutes)

04

Step

In a separate bowl, whisk together brown sugar, corn syrup, eggs, the remaining 1 teaspoon vanilla extract, and 1/4 teaspoon salt until well combined. Stir in the chopped pecans. (Prep time: 5 minutes)

05

Step

Pour the pecan mixture evenly over the cooled crust. (Prep time: 2 minutes)

06

Step

Bake in the oven until the filling is golden brown and set, about 25 to 30 minutes. Let cool completely to room temperature. (Bake time: 25-30 minutes)

07

Step

Once cooled, cut the pie into 36 bars and place them in the refrigerator to chill for about 1 hour. (Chill time: 1 hour)

08

Step

Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring after each interval, until smooth and completely melted (approximately 1 to 3 minutes depending on your microwave).

09

Step

Place the chilled bars on a sheet of waxed paper and drizzle the melted chocolate over the top. Let the chocolate set before serving. (Prep time: 5 minutes)

For a richer flavor, toast the pecans lightly before adding them to the filling.
To prevent the crust from becoming soggy, ensure it is completely cooled before adding the pecan filling.
If you don't have light corn syrup, you can substitute with honey or golden syrup.
Store leftover bars in an airtight container in the refrigerator for up to 5 days.

Next time I'll try adding a sprinkle of sea salt on top of the chocolate drizzle for a salty-sweet contrast.

I used dark chocolate chips instead of semi-sweet and it was a delicious twist. Highly recommend!
