Heat the oil in a wok or large pan over medium heat. Sauté garlic and green chile for 30 seconds, until fragrant. Then, stir in the onions and ginger. Cook until the onions are softened and golden brown, about 5 minutes.

Add the tomatoes, and cook until they break down into a paste, approximately 8-10 minutes, stirring frequently.

Stir in the cauliflower, cabbage, peas, carrots, and mashed potatoes. Season generously with pav bhaji masala. (2 minutes)

Cover the pan and cook for 15 minutes, stirring occasionally to prevent sticking, until the vegetables are tender and well combined.

Season with salt to taste, and stir in the lemon juice to brighten the flavors. (1 minutes)

While the bhaji simmers, toast the dinner rolls until golden brown. Spread lightly with butter. (3 minutes)

Serve the hot bhaji garnished with finely chopped onion, green chile, and fresh cilantro, alongside the buttered and toasted pav rolls.

For a richer flavor, add a tablespoon of butter to the bhaji during the last few minutes of cooking.
Adjust the amount of green chilies according to your spice preference.
If you cannot find pav bhaji masala, you can create your own blend using coriander, cumin, turmeric, red chili powder, amchur (dry mango powder), and garam masala.
A squeeze of lime or lemon is essential to brighten the dish
Ghee or clarified butter adds a distinctive flavor
