The riper the plantain, the sweeter the patacones will be. Look for plantains with mostly black peels. For a flavor variation, sprinkle with a pinch of garlic powder or cayenne pepper along with the salt. Patacones are best served fresh and hot. They can be reheated in a hot oven or air fryer, but they are never quite as good as when freshly made.
