Follow The Directions

01

Step

Prepare Ingredients: Gather and prepare all ingredients. Ensure paneer is cubed, onions and bell pepper are finely chopped, and spices are measured. (5 minutes)

02

Step

Sauté Paneer: In a large skillet or pot, melt butter over medium heat. Add paneer cubes and sauté until golden brown on all sides. Remove paneer from skillet and set aside. (5 minutes)

03

Step

Bloom Spices: Add chopped onions, bell pepper, and jalapeños to the skillet. Cook until onions are translucent and softened. Stir in ground cashews, garlic paste, ginger paste, cayenne pepper, cumin, coriander, and garam masala. Sauté for 1 minute until fragrant. (7 minutes)

04

Step

Create the Masala: Pour in tomato sauce and half-and-half. Stir well to combine. Season with salt to taste. (2 minutes)

05

Step

Simmer and Thicken: Return the sautéed paneer to the skillet. Reduce heat to low and simmer for 30 minutes, or until the sauce has thickened to your desired consistency, stirring occasionally. (30 minutes)

06

Step

Serve: Serve hot, garnished with fresh cilantro, alongside naan bread or basmati rice. (2 minutes)

For a richer flavor, marinate the paneer cubes in a mixture of yogurt, ginger-garlic paste, and spices for at least 30 minutes before sautéing.
Adjust the amount of cayenne pepper to control the spiciness level according to your preference.
Heavy cream can be substituted for half-and-half for a more decadent sauce.
Freshly ground spices will provide the most intense flavor.
Garnish with a swirl of cream and chopped cilantro for an elegant presentation.

I used coconut cream instead of half-and-half for a vegan version, and it was amazing!

Next time, I'll try adding a pinch of sugar to balance the acidity of the tomatoes.
