Step

Preheat the oven's broiler and position the oven rack about 6 inches from the heat source. (5 minutes)

Arrange the tomatillos, onions, poblano peppers, and garlic on a baking sheet.

Broil the vegetables until the skins are charred, turning halfway through, about 3-5 minutes per side. (6-10 minutes)

Remove from oven. Discard the root and outer skin from the onion and garlic; discard the stems and seeds from the peppers. (10 minutes)

In batches, combine tomatillos, onion, poblano peppers, garlic, chipotle peppers, beer, cumin, salt, and pepper in a blender. Pulse to start, then puree until smooth. Pour into a slow cooker. (15 minutes)

Heat the vegetable oil in a large saucepan. Brown the lamb cubes on all sides in the hot oil, about 5 minutes. (10 minutes)

Transfer the browned lamb to the slow cooker.

Cook on High for 4 hours, or on Low for 6-8 hours, until the lamb is tender.

For a smoother sauce, strain it after blending.
If you don't have a broiler, you can char the vegetables on a grill or in a dry skillet over high heat.
Adjust the amount of chipotle peppers to your spice preference.
Serve with warm tortillas, rice, or your favorite side dishes.
