For a richer flavor, try using brown butter instead of melted butter. Simply cook the butter in a saucepan over medium heat until the milk solids turn brown and the butter has a nutty aroma. Allow to cool slightly before using. Feel free to experiment with different nuts! Almonds, walnuts, or pecans would all be delicious substitutes for pistachios. To prevent the salmon from sticking to the foil, you can also use parchment paper instead. If you want a crispier crust, broil the salmon for the last 1-2 minutes of cooking time, keeping a close eye on it to prevent burning.
