For an extra smooth cheesecake, use a fine-mesh sieve to drain any excess liquid from the cottage cheese before blending. If the crust starts to brown too quickly, cover the edges with foil during the last 20 minutes of baking. A springform pan can also be used if you prefer, but an 8-inch square pan is perfect for this recipe.
