Follow The Directions

01

Step
30 mins

Preheat oven to 275 degrees F (135 degrees C). Roast garlic cloves on a baking sheet until golden and fragrant, about 30 minutes.

02

Step
1 hrs

Warm olive oil in a medium saucepan over medium heat. Gently sauté diced onion and chopped peaches until softened, approximately 10 minutes. Stir in curry powder, turmeric, and roasted garlic; cook until caramelized, stirring frequently, about 30 minutes.

03

Step
5 mins

Deglaze the pan with Chardonnay wine, scraping up any browned bits from the bottom. Add vegetable stock, bring to a simmer, and cook for 15 minutes to allow flavors to meld.

04

Step

Remove from heat. Using an immersion blender or a regular blender (working in batches), puree the soup until smooth. Strain through a fine-mesh sieve for an exceptionally velvety texture.

05

Step

Stir in coconut milk. Season to taste with salt and freshly ground black pepper. Reheat gently if serving warm.

For an elegant garnish, consider thinly sliced and caramelized peach wedges.
If coconut milk is unavailable, heavy cream can be substituted for a richer flavor.
For a vegan version, ensure your vegetable broth is plant-based.
