Follow The Directions

01

Step

In a large mixing bowl, whisk together the flour, oats, brown sugar, baking powder, baking soda, cinnamon, and salt. (Prep time: 5 minutes)

02

Step

In a separate bowl, whisk together the buttermilk, melted butter, egg, and vanilla extract. Gently pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix. Fold in the butterscotch chips. Let the batter rest for 5 minutes to allow the oats to absorb the liquid. (Prep time: 10 minutes)

03

Step

Preheat a large non-stick skillet or griddle over medium-low heat. Lightly coat with cooking spray. Pour 1/3 cup of batter onto the hot skillet for each pancake, spreading gently with the back of a spoon to form a slightly thinner circle. Cook for 2-3 minutes, or until bubbles start to form on the surface and the edges appear set. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown. (Cook time: 3-5 minutes per batch)

For extra fluffy pancakes, ensure your baking powder and baking soda are fresh.
Don't overmix the batter! A few lumps are perfectly fine.
Adjust the amount of butterscotch chips to your liking.
Serve immediately with softened butter, maple syrup, or your favorite toppings.
