In a separate bowl, add dark brown sugar, light brown sugar, eggs, softened butter, corn oil, maple syrup, vanilla extract, and salt to the carrot mixture. Stir until the dough is well combined, ensuring no large lumps remain. (5 minutes)

Drop tablespoonfuls of dough about 2 inches apart onto the prepared baking sheet. (5 minutes)

For a richer flavor, try toasting the oats lightly before adding them to the flour mixture.
If you prefer a less sweet cookie, reduce the amount of brown sugar by 1/4 cup.
