Add enough chicken stock to the saucepan to allow the chile pods to float freely. Simmer gently until the pods become softened and pliable, resembling wet leather, about 5 to 7 minutes.

Working in batches, fill a blender halfway with the chile-stock mixture. Secure the lid tightly and pulse a few times before blending on high speed until smooth. Pour the blended sauce into a bowl and repeat with the remaining mixture.

Strain the sauce through a fine-mesh strainer into a clean saucepan over medium heat. Discard the solids.

Stir in the ground cumin, coriander, and dried oregano, followed by the honey. Cook, stirring occasionally, until the sauce has thickened and evenly coats the back of a spoon, about 10 minutes.

For a richer flavor, toast the dried chiles in a dry skillet before adding them to the oil. Be careful not to burn them.
Adjust the amount of chile de arbol peppers to control the spiciness of the sauce.
The sauce can be stored in an airtight container in the refrigerator for up to a week, or frozen for longer storage.
