Transfer the sautéed onion mixture to a large bowl. Add thawed hash brown potatoes, condensed cream of chicken soup, sour cream, Cheddar-Monterey Jack cheese blend, and sharp Cheddar cheese. Stir until well combined and evenly distributed. Spread the mixture evenly into the prepared baking dish. (10 minutes)

In a separate bowl, combine crushed cornflakes cereal and melted butter for the topping. Stir until the cornflakes are evenly coated with butter. Sprinkle the cornflake topping evenly over the potato mixture in the baking dish. (5 minutes)

Bake in the preheated oven until the top is golden brown and the casserole is bubbly, about 45 minutes. Let stand for 10 minutes before serving. (55 minutes)

For an extra layer of flavor, consider adding a pinch of garlic powder to the sautéed onions.
If you prefer a creamier texture, you can substitute the sour cream with cream cheese, softened to room temperature.
Feel free to experiment with different cheese blends. Gruyere or Havarti would be delicious additions.
To prevent the cornflake topping from burning, you can tent the baking dish with foil during the last 15 minutes of baking.
These Funeral Potatoes can be assembled ahead of time and stored in the refrigerator for up to 24 hours before baking. Add about 10-15 minutes to the baking time if baking directly from the refrigerator.
