For an extra layer of flavor, try searing the chuck roast in a hot skillet before adding it to the slow cooker. Adjust the number of pepperoncini peppers to control the level of spiciness. Start with fewer and add more to taste. If you prefer a thicker gravy, whisk a tablespoon of cornstarch with a tablespoon of cold water and stir it into the slow cooker during the last 30 minutes of cooking. Leftovers are excellent in sandwiches or tacos!
