Follow The Directions

01

Step
2 hrs

In a glass or ceramic baking dish, whisk together the shiro miso, sake, soy sauce, brown sugar, and sesame oil until smooth. Add the chicken strips and toss to coat evenly. Cover the dish with plastic wrap and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for a deeper flavor. (Marinating time: 30 minutes - 2 hours)

02

Step
15 mins

Preheat your oven to 375°F (190°C). (Preheating time: ~15 minutes)

03

Step
35 mins

Remove the plastic wrap from the baking dish and bake in the preheated oven until the marinade has beautifully thickened and the chicken is cooked through, reaching an internal temperature of 165°F (74°C). This should take approximately 30-35 minutes, depending on the thickness of your chicken strips. (Baking time: 30-35 minutes)

For an even more intense sesame flavor, sprinkle the chicken with toasted sesame seeds before baking.
If you don't have sake, you can substitute with dry sherry or rice vinegar, although the flavor will be slightly different.
To prevent the sugar in the marinade from burning, you can broil the chicken for the last few minutes to achieve a beautiful glaze.

I was a bit hesitant about the miso, but it turned out amazing! I added a pinch of red pepper flakes for a little heat.
