Prepare the Sweet Potato Filling: In a small saucepan, simmer the diced sweet potato with just enough water to cover it, until very tender (about 8-10 minutes). Drain the water completely, and return the sweet potato to the saucepan.

Mash and Season: Add the butter and milk to the sweet potato. Mash until smooth. Stir in the dry onion soup mix and curry powder. Adjust the curry powder to your preference. Set aside to cool slightly (about 5 minutes).

Preheat Oven: Preheat your oven to 375 degrees F (190 degrees C) (about 2 minutes).

Assemble the Samosas: Lay out a wonton wrapper. Place about 1 teaspoon of the sweet potato mixture in the center of the wrapper. Lightly brush two adjacent edges of the wrapper with water. Fold the wrapper over to form a triangle, pressing firmly along the edges to seal completely. Ensure no filling is exposed to prevent leakage during baking. Repeat with the remaining wrappers and filling (about 20 minutes).

Bake: Brush both sides of each samosa with sesame oil. Arrange the samosas on a baking sheet lined with parchment paper. Bake in the preheated oven for 10 minutes. Flip the samosas and bake for another 5 minutes, or until golden brown and crispy (about 15 minutes).

Cool and Serve: Let the samosas cool slightly on the baking sheet before serving. Serve warm with your favorite dipping sauce.

For a spicier kick, add a pinch of cayenne pepper or a finely minced serrano pepper to the sweet potato mixture.
If you don't have dry onion soup mix, you can substitute with 1/4 teaspoon of onion powder and a pinch of salt.
For extra crispy samosas, consider using an air fryer. Air fry at 350°F (175°C) for about 8-10 minutes, flipping halfway through.
Make sure the edges of the wonton wrappers are properly sealed with water, so there is no leakage during baking.
