Heat oil in a large skillet over medium heat. Add diced onion and sauté until translucent and softened, about 5 minutes.

Stir in roasted red peppers and minced garlic, cooking until fragrant, approximately 1-2 minutes.

Incorporate tomato paste, chili powder, ancho chile powder, cumin, and Spanish paprika. Sauté for another 1-2 minutes until the spices bloom and release their aromas.

Pour in diced tomatoes and water, then season generously with salt and pepper. Increase heat to medium-high and bring the mixture to a simmer. Reduce heat back to medium and let it cook for about 5 minutes, allowing the flavors to meld together.

Reduce heat to medium-low. Create small wells in the tomato mixture, one for each egg. Gently crack an egg into each well.

Cover the skillet and poach the eggs until the whites are set and the yolks are thickened but still runny, approximately 2 1/2 to 5 minutes.

For an extra layer of flavor, consider adding a pinch of smoked paprika or a dash of hot sauce to the tomato base.
If you prefer your eggs more well-done, simply cook them for a longer period.
Garnish with fresh cilantro, crumbled cotija cheese, or a drizzle of Mexican crema for added flair.
Warmed corn or flour tortillas and butter-fried hominy are classic accompaniments to serve alongside this dish.
