In a large nonstick skillet, heat 1 tablespoon of oil over medium-high heat. Add ground beef, season with salt and pepper, and cook until browned and crumbled, approximately 5-7 minutes. Drain any excess grease and transfer the beef to a bowl.

Add the remaining 1 tablespoon of oil to the same skillet over medium-high heat. Add the chopped bell pepper and red onion and cook, stirring occasionally, until tender-crisp, about 5 minutes.

Stir in the chicken broth, rice, and chopped tomato. Bring the mixture to a boil over high heat, then reduce the heat to low, cover, and simmer until the rice is tender and the liquid is absorbed, about 15-20 minutes.

Return the cooked ground beef to the skillet and stir to combine with the rice and vegetables. Cook until heated through, about 2-3 minutes.

Warm the taco shells according to package directions.

Spoon the beef and rice mixture into the warmed taco shells and serve immediately with your favorite toppings.

For a spicier kick, add a pinch of chili flakes or a diced jalapeño pepper to the skillet along with the bell pepper and onion.
To make this recipe vegetarian, substitute the ground beef with a can of black beans or pinto beans, rinsed and drained.
For extra flavor, toast the rice in the skillet for a few minutes before adding the broth. This will add a nutty flavor to the dish.
