In a large skillet over medium heat, crumble the ground beef. Cook, stirring frequently, until the beef begins to brown. (Approximately 5 minutes)

Add the chopped onion, minced garlic, green bell pepper, and jalapeno peppers to the skillet. Continue cooking until the meat is no longer pink and the vegetables have softened. (Approximately 8-10 minutes)

Add enough water to the skillet to cover the beef mixture. Cover the skillet and reduce the heat to low. Simmer gently for 30 minutes.

Stir in the slivered almonds, pimento peppers, raisins, diced tomatoes, tomato paste, and white sugar. Season with dried oregano and salt.

Return the mixture to a simmer over low heat, stirring occasionally to prevent sticking. Continue to simmer for at least 1 hour, or up to 2 hours for a deeper, richer flavor. The longer it simmers, the more the flavors will meld together. (1 to 2 hours)

For an even spicier dip, leave the seeds in one of the jalapeno peppers.
If you don't have blanched slivered almonds, you can use regular slivered almonds. Toast them lightly in a dry pan before adding them to the dip to enhance their flavor.
Taste the dip after it has simmered for an hour and adjust the sugar and salt to your liking. Some people prefer a sweeter dip, while others prefer a more savory one.
This dip is even better the next day, after the flavors have had a chance to meld together completely. Store leftovers in an airtight container in the refrigerator.
