Follow The Directions

01

Step
5 mins

Prepare the Zucchini: Using a vegetable peeler, peel the zucchini lengthwise into thick ribbons. Place the ribbons in a large bowl. (5 minutes)

02

Step
5 mins

Combine Salad Ingredients: Add the quartered cherry tomatoes, Kalamata olives, and chopped artichoke hearts to the bowl with the zucchini ribbons. (5 minutes)

03

Step
3 mins

Make the Vinaigrette: In a small bowl, whisk together the white wine vinegar, lemon juice, extra virgin olive oil, minced garlic (if using), and chopped fresh herbs (if using). Season with salt and pepper to taste. (3 minutes)

04

Step
2 mins

Dress the Salad: Pour the vinaigrette over the zucchini mixture and toss gently to combine, ensuring all ingredients are evenly coated. (2 minutes)

05

Step
2 mins

Add Feta and Serve: Sprinkle the crumbled feta cheese evenly over the salad. Serve immediately or chill for later. (Optional: Allow the salad to marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.) (2 minutes)

For an extra layer of flavor, try grilling the zucchini ribbons lightly before adding them to the salad.
If you don't have Kalamata olives, other types of olives will work as well. Just be sure to pit them first.
Adjust the amount of feta cheese to your liking. You can also substitute goat cheese or another crumbly cheese.
This salad is best served fresh, but it can be stored in the refrigerator for up to 24 hours. However, the zucchini may become a bit softer over time.
