Follow The Directions

01

Step

In a medium saucepan, combine the marshmallows and milk. Heat over low heat, stirring frequently, until the marshmallows are completely melted and the mixture begins to simmer gently. Remove from heat. (Approximately 5-7 minutes)

02

Step

In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the egg yolk and mix until well combined. Gradually fold in one-third of the melted marshmallow mixture into the cream cheese mixture, then quickly fold in the remaining marshmallow mixture until just combined and no streaks remain. Stir in the fresh lemon juice. (Approximately 8-10 minutes)

03

Step

In a separate medium bowl, whip the chilled heavy cream using an electric mixer until soft peaks form. Gently fold the whipped cream into the cream cheese-marshmallow mixture until just combined, being careful not to overmix. (Approximately 5 minutes)

04

Step

Pour the marshmallow cream mixture into the prepared graham cracker crust, spreading evenly. Cover with plastic wrap and chill in the refrigerator for at least 3 hours, or preferably overnight, to allow the cake to set completely. (Chill for 3+ hours)

For an extra burst of flavor, consider adding a teaspoon of lemon zest to the cream cheese mixture.
Ensure the cream cheese is fully softened to avoid lumps in the final product.
Do not overmix the batter after adding the whipped cream, as this can deflate the mixture and result in a less airy texture.
Garnish with fresh berries or a dusting of powdered sugar before serving for an elegant presentation.
For a richer flavor, use full-fat cream cheese and heavy cream.
