Follow The Directions

01

Step

In a mixing bowl, whisk together the creamed corn, flour, milk, beaten egg, sugar, salt, 2 teaspoons of oil, baking powder, vanilla extract, and black pepper until just combined. The batter should be thick but pourable. If the batter appears too thin, gradually add more flour, one tablespoon at a time, until the desired consistency is reached. (5 minutes)

02

Step

Pour approximately 1/4 inch of oil into a large, heavy-bottomed skillet. Heat over medium-high heat until the oil shimmers and is hot enough for frying. (3-5 minutes)

03

Step

To test the oil, drop a tiny amount of batter into the skillet. It should immediately sizzle and turn golden brown within seconds. Once the oil is ready, carefully drop tablespoons of batter into the hot oil, being careful not to overcrowd the pan. Fry no more than 4 fritters at a time. (2 minutes)

04

Step

Fry the fritters for 1 1/2 to 2 minutes on the first side, until golden brown. Gently flip and cook for an additional 1 minute, or until both sides are evenly golden brown and the fritters are cooked through. (3 minutes)

05

Step

Remove the fritters from the skillet with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve immediately and enjoy! (2 minutes)

For extra flavor, consider adding a pinch of cayenne pepper to the batter for a subtle kick.
Ensure the oil is hot enough before frying; otherwise, the fritters will absorb too much oil and become greasy.
These fritters are best served immediately while they are still warm and crispy.
