Return the drained macaroni to the pot. Add butter and stir until melted and evenly distributed. (2 minutes)

In a large bowl, whisk together evaporated milk, milk, eggs, and sour cream. Season with sugar, pepper, and salt. (5 minutes)

Pour the macaroni into the prepared baking dish. Sprinkle Colby Jack cheese, processed cheese food, and Cheddar cheese evenly over the macaroni. Pour the milk mixture over the cheese. (5 minutes)

Bake in the preheated oven until the top is lightly browned and the cheese is bubbly, 30 to 45 minutes. Let stand for 10 minutes before serving. (50 minutes)

For an extra layer of flavor, try adding a dash of hot sauce or a pinch of smoked paprika to the milk mixture.
To prevent the top from browning too quickly, cover the baking dish with foil during the last 15 minutes of baking.
This mac-n-cheese can be made ahead of time and refrigerated for up to 24 hours. Add 15-20 minutes to the baking time if baking from cold.
Feel free to experiment with different cheese combinations to find your perfect flavor profile. Gruyere, Fontina, or Monterey Jack would all be delicious additions.
