Incorporate dry ingredients: In a separate bowl, whisk together the baking powder and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. (3 minutes)

Chill the dough: Wrap the dough in plastic wrap and freeze for 1 hour. This will prevent the cookies from spreading too thin during baking. (60 minutes)

For an even more intense lemon flavor, add a pinch of lemon zest to the reserved lemon sugar.
