Step

In a large frying pan, brown the ground beef and pork with a small amount of vegetable oil over medium heat. (Approximately 10-12 minutes) Drain off any excess fat, then transfer the meat to a large mixing bowl and set aside.

Using the same pan, add a splash of soy sauce and cook the chopped carrots until they are tender. (Approximately 5-7 minutes) Add the bean sprouts, sugar snap peas, mushrooms, and green onions. Season with a dash of soy sauce, salt, garlic powder, and black pepper. Cook and stir for about 5 minutes, or until the vegetables are tender but still slightly firm. Add the cooked vegetables to the bowl with the beef and pork, and toss everything together until well combined.

Keep the lumpia wrappers covered with a damp cloth to prevent them from drying out as you work. Take about 5 wrappers at a time. Position a wrapper so that one corner faces you. Place a small amount of the filling mixture on the corner closest to you. Fold the corner over the filling. Fold the two side corners inward towards the center, and then continue rolling the wrapper up tightly, like a burrito, leaving the top corner exposed.

Brush a small amount of beaten egg white onto the exposed top corner of the wrapper to act as a glue. Finish rolling the lumpia tightly to seal. Repeat the process with the remaining filling and wrappers.

Heat canola oil in a deep-fryer or a deep skillet to 375 degrees F (190 degrees C). Carefully place the lumpia rolls into the hot oil, being careful not to overcrowd the pan. Fry for about 5 minutes, or until they are golden brown and crispy, turning them occasionally to ensure even cooking.

Remove the fried lumpia rolls from the oil and place them on paper towels to drain off any excess oil. Serve hot and enjoy!

For a vegetarian option, you can substitute the ground beef and pork with crumbled tofu or a plant-based ground meat substitute.
Feel free to adjust the amount of vegetables to your liking. Cabbage, celery, or water chestnuts would also be delicious additions.
Lumpia rolls can be assembled ahead of time and frozen. To freeze, place the uncooked rolls in a single layer on a baking sheet lined with parchment paper. Once frozen solid, transfer them to a freezer bag or container. When ready to cook, fry them directly from frozen, adding a minute or two to the cooking time.
Serve these with your favorite dipping sauce, such as sweet chili sauce, soy sauce with a squeeze of lemon, or a spicy peanut sauce.
