Make the Feta Spread (5 minutes): In a small bowl, stir together 2 ounces of feta cheese, mayonnaise, lime juice, mint, and parsley. Set aside.

Prepare the Red Pepper (15 minutes): Preheat the oven's broiler and position the rack about 6 inches from the heat source. Line a baking sheet with aluminum foil. Cut the bell pepper in half, remove seeds and ribs. Place cut-side down on the baking sheet. Broil until the skin is blackened and blistered (about 5 minutes). Transfer to a paper bag to cool and steam (about 5 minutes).

Prepare the Grill (5 minutes): Preheat an outdoor grill for medium heat, and lightly oil the grate.

Combine Burger Ingredients (10 minutes): Peel and dice the roasted red pepper. In a large bowl, gently combine ground beef, spinach, feta, bread crumbs, onion, egg, garlic, mint, basil, parsley, salt, and pepper until just mixed. Form into four 4 1/2-inch patties.

Grill the Burgers (8 minutes): Cook the patties on the preheated grill until cooked to your desired doneness, about 4 minutes per side for medium. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

Assemble and Serve (5 minutes): Serve burgers on warm rolls with feta cheese spread, fresh tomatoes, and lettuce.

For a richer flavor, use a blend of ground beef and ground lamb.
If you don't have fresh herbs, you can substitute with dried herbs. Use about 1 teaspoon of each dried herb.
Toast the Kaiser rolls for a more satisfying crunch.
The feta spread can be made ahead of time and stored in the refrigerator for up to 3 days.
Add a drizzle of olive oil to the burgers while grilling for added moisture.
