In a large bowl, combine 3/4 cup of the shredded Colby-Monterey Jack cheese, the minced onion, sour cream, mayonnaise, and most of the diced chives. Gently stir in the cooled roasted potatoes and the crumbled bacon. Ensure all ingredients are well combined. (10 minutes)

Garnish the potato salad with the remaining 3/4 cup of shredded cheese and the reserved diced chives for a pop of color and fresh flavor. (2 minutes)
