Cover the saucepan and let it simmer for 20-30 minutes, stirring occasionally, until the sauce has thickened slightly. (Total time: ~30-40 minutes)

Craft the Cheese Sauce: While the vegetable sauce simmers, melt the butter in a separate saucepan over medium heat. Add the flour and whisk vigorously for 2 minutes to create a roux. Gradually pour in the milk, whisking continuously to prevent lumps, until the sauce thickens. Stir in most of the Cheddar cheese (reserving some for topping) and continue stirring until the cheese is fully melted and the sauce is smooth. Season with nutmeg, salt, and pepper. (Total time: ~15 minutes)

Soften the Noodles: Briefly soak the lasagna noodles in warm water for about 30 seconds to soften them slightly. This will help them cook evenly in the lasagna. (Total time: ~1 minute)

Assemble the Lasagne: Spread a layer of the vegetable sauce on the bottom of the prepared baking dish. Cover with a layer of lasagna noodles, followed by a layer of the cheese sauce. Repeat these layers, ending with a layer of cheese sauce on top. Sprinkle the reserved Cheddar cheese, nutmeg, salt, and pepper over the final layer. (Total time: ~15 minutes)

Bake: Bake the lasagna for 40-50 minutes, or until the top is golden brown and bubbly. Let it rest for 10 minutes before slicing and serving. (Total time: ~50 minutes)

For a richer flavor, consider using a combination of cheeses in the cheese sauce, such as mozzarella, ricotta, and parmesan.
If you prefer a smoother vegetable sauce, you can use an immersion blender to partially blend the sauce before layering the lasagna.
Feel free to add other vegetables to the sauce, such as mushrooms, eggplant, or spinach.
To prevent the top from browning too quickly, you can tent the lasagna with aluminum foil during the last 15 minutes of baking.
Lasagne can be assembled ahead of time and stored in the refrigerator for up to 24 hours before baking. Add an extra 15-20 minutes to the baking time if baking from cold.
