In a heavy-bottomed saucepan, combine granulated sugar, water, lemon juice, and salt. Bring to a boil over medium heat, stirring frequently. (5 minutes)

Add sifted powdered sugar, egg white, and the remaining 1/8 teaspoon of salt to the bowl. Beat with an electric mixer until the mixture is thick and glossy. (5-10 minutes)

Add vanilla extract and beat until just combined. (1 minute)

Add the softened cream cheese and beat until the dip is smooth, creamy, and fully incorporated. (2-3 minutes)

For the best texture, ensure your cream cheese is fully softened before using.
If you're concerned about using raw egg whites, you can substitute with pasteurized egg whites from a carton.
Feel free to adjust the amount of lemon juice to your liking for a more or less pronounced lemon flavor.
This dip is also delicious with graham crackers, cookies, or even spread on toast!
