Follow The Directions

01

Step
0 mins

Season shrimp lightly with salt and pepper.

02

Step
5 mins

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add shrimp; cook until opaque, 2 to 3 minutes per side. Transfer to a bowl.

03

Step
0 mins

If zucchini noodles are too long, chop into slightly shorter pieces for easier eating.

04

Step
11 mins

Heat 1 tablespoon olive oil in the same skillet over medium heat. Add zucchini noodles, garlic, 1/2 teaspoon sea salt, and 1/4 teaspoon pepper. Cook and stir until slightly softened, 2 to 3 minutes. Add lemon zest, spinach, and chicken broth. Cook until liquid reduces by 1/4, about 5 minutes. Stir in the shrimp and capers. Cook until shrimp is warmed through, about 1 minute more. Drizzle the remaining olive oil on top.

For an extra layer of flavor, consider adding a pinch of red pepper flakes to the zucchini noodles while cooking.
If you don't have a spiralizer, you can use a vegetable peeler to create wide zucchini ribbons.
Fresh basil or parsley make a lovely garnish.
Serve immediately for the best texture.

My zucchini noodles were a bit watery, but the flavor was still great. I'll try not to overcook them next time.

Next time, I'll try adding some sun-dried tomatoes for a more intense flavor.
